According to Brusco, the FDA recognizes that seniors face a greater food risk that younger people. The FDA is outlining some of the inherent food safety concerns for older Americans in Food Safety for Older Adults.

These changes often make more susceptible to contracting a foodborne illness or food poisoning. Stomach and intestinal tract may hold on to foods for a longer period of time; liver and kidneys may not readily rid our bodies of toxins; and our sense of taste or smell may be altered."
