Kai's Kookies and More Bakery Opens Its Second Location

Charlotte, NC -- (SBWire) -- 04/01/2015 --As its name suggests, this Charlotte Bakery takes cookies as seriously as its homespun baked goods and coffee. Hand Iced Cookies are custom made and carefully decorated. The house coffee is made with two shots of espresso and fresh spring water. Friendly Owners and employees greet you with a smile, and the coffee bar serves some of the best specialty cold& hot coffees in Charlotte. Three inch round personal "Bouji" cheesecakes topped with a flavorful cream are colorfully decorated and come in decadent flavors that include Mudslide, Banana Pudding, Dreamsicle, Key lime or Cookies and Cream. Other coffee-pairing options range from delicious breakfast breads to scrumptious Pound Cakes and delightful pastries.

Kai's Kookies and More Bakery was started by Patrick and Tracy Watkins the proud parents of Kai, their 17 year old daughter and Aiden their 11 year old son. Kai the namesake of the business had to be revived at birth and was soon diagnosed with Cerebral Palsy a condition caused by damage to the parts of the brain that control movement, balance, and posture. Kai's parents were told that their daughter may never speak, see or walk. Patrick a UNCC alumni and a Civil Engineer and Tracy a Clemson Alumni and former Electrical Engineer in the Textile industry both found their jobs casualties of the declining Textile market in the early 2000's and the recent recession that devastated the economy beginning in 2008. After being laid off in 2011 and with what remained of his savings Patrick chose to embark on a journey opening a Bakery in a shopping center close to their home. After opening in the summer of 2011 the Watkins had to overcome the many hardships of operating the new business with limited to no income and getting their customers to overcome the impression that they were not located in the best environment. Not knowing much about running a Bakery business the Watkins relied on the customer base Tracy had developed while baking custom cookies at home and Patrick began Marketing and developing recipes that reflected his background of growing up in a Military family that lived in the South and overseas. Soon word spread of the one of a kind treats made with exotic spices they offered and the beautiful creations made in the small shop.

Soon after opening the Bakery was broken into and most of the equipment was stolen along with some of the inventory. The Watkins decided to push through this setback and expanded their hours to midnight, opening on Mondays and delivering sweets thru out the Metro. They also begin to position themselves by marketing extensively thru social media, their local community and on the internet.
