The seeds are germinated by soaking in water and then dried by hot air to discontinue the germination process. The cereal grains commonly used for malting are barley, wheat, rice, oats, and rye. Malts are broadly classified into two types: diastatic (malt containing active enzymes) and nondiastatic (malt with inactive enzymes).
