The seeds are germinated by soaking in water and then dried by hot air to discontinue the germination process. The cereal grains commonly used for malting are barley, wheat, rice, oats, and rye. Malts are broadly classified into two types: diastatic (malt containing active enzymes) and nondiastatic (malt with inactive enzymes). Based on this, the malt is differentiated into base and specialty. Base malts have enough diastatic power (i.e., amount of enzymes present) to convert their own starch into sugar, while specialty malts have less diastatic power but provide more flavor & color to the finished product. Malt is used as a raw material to produce alcoholic beverages and numerous bakery & confectionery products as well.
