Costa Mesa, CA -- (SBWIRE) -- 10/01/2015 -- Nicholas Cataldo is the founder of Bleach, a restaurant in coastal Orange County that is dedicated to the concept of merging the best of the taqueria, the cevicheria and the tapas bar into one unique location.  With fresh, locally-sourced foods and an eclectic menu featuring the best of "street food," the restaurant will celebrate the diversity of South American and California food and drink.  Now, Cataldo has launched a Kickstarter campaign to raise the funds to open the restaurant, including a rooftop, open-air bar.

Bleach will serve as a new, contemporary Latin tapas option for diners in Orange County.  The restaurant will spark a new trend in dining, with clean, fresh ingredients and an exciting atmosphere that includes new cooking styles.  Using only local, fresh produce, fish and meat, the restaurant will serve its food tapas style in small portions so that patrons can enjoy a wide variety of dishes.  The restaurant will focus on a unique dining experience with fresh, well-prepared food served in a friendly atmosphere.  Both the restaurant proper and the rooftop bar will serve food and beverages, allowing patrons their choice of spots to relax.

Because tapas lends itself well to alcohol consumption, patrons can enjoy a wide variety of cocktails with their food.  Marisela Camacho, a native of New York, has 11 years of restaurant experience and will serve as designer cocktail consultant and mixologist for the restaurant.
