Modified starch or starch derivative refers to the derivative obtained by treating native starch chemically, physically, and enzymatically, thereby altering its properties. Native starches basically refer to pure starch forms that are obtained from different sources such as wheat, potato, corn, tapioca, and cassava. Chemically, these are long-chain carbohydrates that do not dissolve in cold water and facilitate swelling, depending upon the temperature used. Therefore, native starches are extensively used in food for decades. However, due to the limitations, such as the breaking down of native starch in acidic environments or when reheated, the food manufacturers are opting for starches that are modified, commonly known as modified starches.
