One recommended best practice is for food manufacturers to prepare and implement a written food safety plan, which includes a hazard analysis, preventative controls (e.g., process controls, food allergen controls, sanitation controls, and recall plan), monitoring procedures, corrective actions, verification activities, and recordkeeping.
Allergen control programs are multifaceted with elements ranging from ingredient supplier verification, storage, scheduling, formula and rework control, sanitation and changeover, and label verification. Several best practices are discussed in the e-Book. Lopez shared, “It’s exciting when we find new ways to share best practices with the industry.”
Lopez began her career in the food industry in 1993. Over the years, she has led Quality, Sanitation, and Product Development departments for various international food companies. At AIB, she has held roles of Food Safety Auditor, HACCP Coordinator, Director of Food Safety Education, Vice President of Food Safety Education and currently, Vice President of Food Safety Services Innovation.
