Consumption among Ecuadorians is clearly split by socioeconomic level. Middle-upper- and upper-income segments are evolving and demanding more specialised products, such as oyster sauce, for example. On the other hand, lower-income consumers have very basic demands in terms of sauces dressings and condiments, as they do not consume much herbs and spices, but tend to consume basic table sauces (ketchup, mayonnaise) and spicy sauces. Traditional condiments such as garlic are still very popular.
