Carrageenan is a food additive extracted from class Rhodophyceae. It is a family of sulphated polysaccharides and posses the hydrocolloid properties. Carrageenan is used as a food stabilizer, gelling and thickening agent. Carrageenan is high molecular weight polysaccharides with repeating galactose units. Lambda, iota and kappa are the commercial classes of carrageenan in which kappa forms strong rigid gels, iota gives soft gels whereas lambda does not form gel and is used as a thickener.
